Freezing


There are some foods that I am just not crazy about how they taste canned, in those cases I prefer to freeze.


Equipment


Process

Cooked foods -

This applies to cakes, breads, home fries, cookies, pancakes, etc.

  1. Once food has been cooked and completely cooled - place in freezer container (I choose to always double wrap mine to prevent freezer burn)

  2. Freeze


Raw foods -

Many sources recommend blanching, while others feel it is an unnecessary step.

I personally do not do it, however, if you wish to blanch your veggies before storing::

  1. Boil or steam vegetables briefly,

  2. Plunge them into an ice bath.

  3. Allow to dry completely.



To Freeze:

  1. Slice into small pieces

  2. Place in a single layer on a baking sheet (no edges touching each other)

  3. Freeze for about 2 hours

  4. Remove from freezer

  5. Place food in the freezer container of your choice

  6. Label the container

  7. Place back in freezer.




Storage

Store for up to 1 year.
