There are some foods that I am just not crazy about how they taste canned, in those cases I prefer to freeze.
Equipment
baking sheet
freezer container / zip lock bags / vacuum sealed bags
Process
Cooked foods -
This applies to cakes, breads, home fries, cookies, pancakes, etc.
Once food has been cooked and completely cooled - place in freezer container (I choose to always double wrap mine to prevent freezer burn)
Freeze
Raw foods -
Many sources recommend blanching, while others feel it is an unnecessary step.
I personally do not do it, however, if you wish to blanch your veggies before storing::
Boil or steam vegetables briefly,
Plunge them into an ice bath.
Allow to dry completely.
To Freeze:
Slice into small pieces
Place in a single layer on a baking sheet (no edges touching each other)
Freeze for about 2 hours
Remove from freezer
Place food in the freezer container of your choice
Label the container
Place back in freezer.
Storage
Store for up to 1 year.
